Pumpkin Spice Oatmeal is a cozy way to enjoy oats. Creamy oats, simmered with pumpkin puree and warming spices. The oats are full of fibre and antioxidants and the pumpkin lends an added boost of Vitamin A.
Ingredients
- 1/2 cup (125 mL) quick oats
- 3/4 cup (175 mL) water
- 2 tsp (10 mL) brown sugar
- pinch salt
- 1/2 tsp (2 mL) pumpkin pie spice
- 2 Tbsp (30 mL) pumpkin puree
- 1/2 tsp (2 mL) vanilla extract
- 2 Tbsp, (30 mL) milk or cream, dairy or non-dairy
Method

Bring water to a boil. Stir in oats, sugar, salt, pumpkin pie spice and pumpkin puree.

Simmer for 5 minutes, or until oats are tender, stirring frequently.

Remove from heat and stir in vanilla and milk or cream.
