Sweet and Sour Turkey Cabbage Rolls

Gather the family and start rolling! Whether you are a beginner or expert cabbage roller, Manitoba turkey is a great way to enjoy this classic potluck dish. Turkey is a great lean protein that makes for such a mouthwatering dish slathered in sweet and sour tomato sauce. You’d better double up the batch or there won’t be any leftovers!

Ingredients

  • 2 lbs (900 g) Granny's Ground Turkey
  • 1-(26 oz/796 mL) can whole tomatoes, pureed
  • 1/4 cup (65 mL) brown sugar
  • 1/2 cup (125 mL) cider vinegar
  • 1 tsp (5 mL) salt
  • 1/4 tsp (1.25 mL) ground thyme
  • 1/2 tsp (2.5 mL) mustard powder
  • 1/4 cup (65 mL) canola oil
  • 1 cup (250 mL) Peak of the Market onion, finely chopped
  • 1/2 cup (125 mL) Peak of the Market carrot, finely chopped
  • 1/2 tsp (2.5 mL)  sea salt
  • 1/4 tsp (1.25 mL) black pepper
  • 1 cup (250 mL)  rice, cooked
  • 1 head Peak of the Market green cabbage
  • 1 cup (250 mL) Peak of the Market onion, sliced
  • 1 bay leaf

Method

  1. Preheat oven to 350°F (177°C).
  2. Make sauce by combining tomatoes, brown sugar, vinegar, salt, thyme and mustard.
  3. In a large frying pan sauté turkey, onion and carrot in batches with olive oil until lightly browned. Season with salt and pepper, add rice and one cup of sauce.
  4. Add sliced onions and bay leaf to the remaining sauce.
  5. Bring a large pot of water to a boil.
  6. Cut about 1 inch off the bottom of the cabbage and remove discoloured outer leaves. Place cabbage head in boiling water for about 2 minutes and then remove outer leaves that are pliable and set aside. Return the cabbage to the water and repeat the process until you have about 18 good leaves. Dry leaves with towel and cut thick centre ribs off where needed.
  7. Grease a casserole or roasting pan with oil. Place about 3 tablespoons of filling inside each leaf, fold the sides and roll them into cylinders and place them into the pan.
  8. Cover the rolls with sauce and then cover the pan with foil.
  9. Bake for 1.5 hours.
