Ingredients
- 150 g (5 oz) turkey kielbasa sausage
- 1 tbsp (15 mL) canola oil
- 1 can (540 mL) tomatoes with peppers and onions, diced or stewed
- ½ cup (125 mL) white navy beans
- 1 tsp (5 mL) dried oregano
- ¼ tsp (1 mL) chili flakes optional
- ½ tsp (2 mL) sea salt
- ¼ tsp (1 mL) black pepper
- 2 cups (500 mL) baby spinach
- 2 tbsp (50 mL) Parmigiano-Reggiano cheese, shaved
- 2 slices baguettes optional

Heat a medium size frying pan on medium-high and evenly coat the pan with canola oil. While the pan is pre-heating, slice the turkey kielbasa into evenly sized rounds. Place kielbasa rounds into the pan and sear on each side for 4-5 minutes, or until golden brown.

Once the kielbasa is finished, turn the heat down to medium low and add the tomatoes, navy beans, oregano, chili flakes, sea salt and pepper. Stir well to combine. Let simmer for 10 minutes.

Add the spinach to the skillet and stir well until just wilted. Remove from the heat and top with shaved parmesan. Serve with baguette on the side for dipping.
Tips
This would make a delicious and filling breakfast dish! Crack your eggs right into the tomatoes after the spinach is cooked and cover. Simmer until the yolks are cooked to your liking.
