Ingredients
- ½ cup (125 mL) strawberry jam
- 3 tbsp (45 mL) creamed honey
- 2 tbsp (30 mL) canola oil
- ½ tsp (2 mL) salt
- ½ tsp (2 mL) vanilla extract
- 2 cups (500 mL) oat flour
- ¼ cup (50 mL) ground flax seed
- ½ to ¾ cup (125 ml to 175 mL) unsweetened flaked coconut
Method
- In a medium bowl stir together jam, honey, canola oil, salt, and vanilla extract.
- Add in the oat flour and ground flax seed. Stir to combine.
- Place the flaked coconut in a separate bowl.
- Using a small scoop, form into balls and roll in coconut flakes to coat.
- Store in the refrigerator or freezer.
