Ingredients
- 2 large Countryside Farms Free Run Vita Eggs
- ½ cup (125 mL) melted coconut oil or canola oil
- 2 cups (500 mL) mashed bananas (about 4 large ripe bananas)
- ⅓ cup (75 mL) packed brown sugar
- ⅓ cup (75 mL) plain yogurt or sour cream
- 1 teaspoon (5 mL) vanilla extract
- 1 ¾ cups (425 mL) whole wheat flour or barley flour.
- ¾ cup (175 mL) walnuts, chopped
- ⅓ cup (75 mL) ground flax seed
- 1 teaspoon (5 mL) baking soda
- ½ teaspoon (2 mL) ground cinnamon
- ¼ teaspoon (1 mL) salt
Method
- Preheat oven to 350°F (180°C).
- In large bowl whisk eggs.
- While whisking, add the melted coconut oil or canola oil in a stream. Whisk until fully combined.
- Whisk in brown sugar, yogurt or sour cream, mashed bananas, and vanilla extract.
- Add in flour, walnuts, ground flax seeds, baking soda, cinnamon, and salt. Gently stir until well combined.
- Spread the batter into a greased loaf pan.
- Bake in preheated oven for 60-65 minutes.
- Allow to cool for 5 minutes in the pan. Remove from the pan and place on a cooling rack to cool. Let cool at least one hour before slicing.
- Store in the fridge.
