- 2 large Countryside Farms Free Run Vita Eggs
- 1/2 cup (125 ml) melted coconut oil
- 2 cups (500 ml) mashed bananas (about 4 large ripe bananas)
- ⅓ cup (80 ml) packed brown sugar
- 1/3 cup (80 ml) plain yogurt or sour cream
- 1 teaspoon (5 ml) vanilla extract
- 1 ¾ cups (430 ml) whole wheat flour or barley flour.
- ¾ cup (180 ml) walnuts, chopped into crumbs
- ⅓ cup (80 ml) ground flax seed
- 1 teaspoon (5 ml) baking soda
- 1/2 teaspoon (2 ml) ground cinnamon
- 1/4 teaspoon (1 ml) salt
Method
- Preheat the oven to 350°Fahrenheit (180°Celsius).
- Whisk together the eggs.
- While whisking, add the melted coconut oil in a stream. Whisk until fully combined.
- Whisk in the brown sugar, yogurt or sour cream, mashed bananas, and vanilla extract.
- Add in the flour, walnuts, ground flax seeds, baking soda, cinnamon, and salt. Fold with a wooden spoon until combined.
- Spread the batter into a greased loaf pan.
- Bake in the preheated oven for 60-65 minutes.
- Allow to cool for 5 minutes in the pan and then remove from the pan and place on a cooling rack for a minimum of one hour before slicing.
- Store in the fridge.
