One Bowl Walnut Banana Bread

Ingredients

  • 2 large Countryside Farms Free Run Vita Eggs
  • 1/2 cup (125 ml) melted coconut oil
  • 2 cups (500 ml) mashed bananas (about 4 large ripe bananas)
  • ⅓ cup (80 ml) packed brown sugar
  • 1/3 cup (80 ml) plain yogurt or sour cream
  • 1 teaspoon (5 ml) vanilla extract
  • 1 ¾ cups (430 ml) whole wheat flour or barley flour. 
  • ¾ cup (180 ml) walnuts, chopped into crumbs 
  • ⅓ cup (80 ml) ground flax seed
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (2 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) salt

Method

  1. Preheat the oven to 350°Fahrenheit (180°Celsius).
  2. Whisk together the eggs.
  3. While whisking, add the melted coconut oil in a stream. Whisk until fully combined.
  4. Whisk in the brown sugar, yogurt or sour cream, mashed bananas, and vanilla extract. 
  5. Add in the flour, walnuts, ground flax seeds, baking soda, cinnamon, and salt. Fold with a wooden spoon until combined.
  6. Spread the batter into a greased loaf pan. 
  7. Bake in the preheated oven for 60-65 minutes. 
  8. Allow to cool for 5 minutes in the pan and then remove from the pan and place on a cooling rack for a minimum of one hour before slicing.
  9. Store in the fridge.
