Pina Colada White Bean Smoothie

Ingredients

  • 1 cup (250 mL) cooked white beans, rinsed well
  • 2 cups (500 mL) pineapple juice
  • 1 can (400 mL) light coconut milk
  • 1/2 cup (125 mL) mashed ripe banana
  • 1 1/2 cups (375 mL) crushed ice
  • 1/2 cup (125 mL) vanilla Greek yogurt, fat free
  • 2 Tbsp (30 mL) honey
  • 1 Tbsp (15 mL) fresh lime juice

Directions

  1. Place all ingredients into a blender and puree until smooth
  2. Pour into glasses, garnish with a slice of lime and serve immediately.
