- 1 tbsp canola oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 bell pepper, diced
- 1 lb. ground turkey
- 1 jar (approx. 650ml) tomato sauce
- 1 large can (796 ml) diced tomatoes
- 1 tbsp each dried basil and oregano
- 1 tsp crushed fennel seeds
- ½ tsp each salt and pepper
- 1 ¼ cup orzo
- ½ cup parmesan or asiago cheese
Method
- In a large pot, on medium heat cook onion, garlic and peppers in canola oil until onion is translucent.
- Add the ground turkey to the pot and cook until no pink is left. Break up into small pieces.
- Stir in tomato sauce, canned tomatoes, basil, oregano, fennel, salt and pepper and bring to a simmer.
- Turn heat to medium low and stir in orzo. Cover and let simmer until orzo is cooked through (approximately 8-10 minutes).
- Mix in cheese before serving.
