- ¼ cup (60 mL) canola oil
- 2 Tbsp (30 mL) mayo
- 2 Tbsp (30 mL) grated Parmesan cheese
- 2 Tbsp (30 mL) lemon juice
- 1 Tbsp (15 mL) red wine vinegar
- 1 tsp (5 mL) Worcestershire sauce
- 2 tsp (10 mL) anchovy paste
- ½ Tbsp (8 mL) dijon mustard
- 2 cloves garlic, minced
- ¼ tsp (1.2 mL) each salt and ground black pepper
- ¼ cup (60 mL) red onions, sliced
- ¼ cup (60 mL) croutons
- 6 cups shredded kale
Method
- In a bowl, whisk mayo, oil, parmesan, lemon, vinegar, Dijon mustard, anchovy paste, Worcestershire sauce, garlic, salt and black pepper.
- In a large bowl, add kale, red onions and croutons and drizzle desired amount of dressing onto salad. Keep remaining dressing refrigerated in a mason jar.
- Serve with Grilled Steak & Smashed Potatoes for a restaurant quality meal!
