BBQ Chicken Flatbreads

Ingredients
2 large flatbread crusts, or 4 small flatbreads or Naan breads
¾ cup (175 mL) BBQ sauce, divided
2 cups (500 mL) cooked, shredded chicken
½ cup (125 mL) crispy bacon bits
2 jalapenos, seeded and finely minced (optional)
½ red onion, thinly sliced
1 cup (250 mL) grated mozzarella cheese
1 cup (250 mL) smoked or plain gouda cheese
2 green onions, thinly sliced
Method
Preheat oven to 425°F.
Arrange flatbreads on baking sheets.
Spread 2 tablespoons of BBQ sauce on each flatbread.
Toss chicken with remaining BBQ sauce. Spread chicken mixture evenly on top of each flatbread.
Top with bacon, jalapenos and red onion.
Evenly distribute cheeses.
Bake flatbreads for 10-12 minutes, or until cheese is melted and crust is crisp on edges.
Top with green onions.
Tips
This recipe easily scales up or down to fit number of people served.
