Preheat oven to 425°F (220°C) or prepare air fryer for use.
Lightly season turkey strips with salt and pepper, if not already seasoned.
In medium bowl place turkey strips in 1 cup (250 mL) buttermilk. Let sit for 1 hour or more. Drain.
Set up 3 dredging stations. Place flour on flat plate. Place remaining 1 cup (250 mL) buttermilk in another pie plate and mix panko crumbs, olive oil, garlic, paprika, mustard, pepper and salt in third pie plate.
Taking a few turkey strips at a time, first dredge them in flour, then dip them in buttermilk and roll then in the panko mixture until they are well coated.
Place turkey strips on a baking sheet not overlapping.
Bake 20 – 25 minutes, flipping once after 10 minutes. If using an air fryer cook them for 12-14 minutes at 400°F (200°C), flipping once.
In small bowl combine all sauce ingredients. Mix well.
