White Bean Chocolate Chip Cookies

Ingredients

  • 1 cup (250 mL) butter or margarine, at room temperature
  • 1 cup (250 mL) brown sugar
  • ½ cup (125 mL) white sugar
  • 2 Countryside Farms Free Run Vita Eggs
  • 1 19oz-can (560 mL) white beans
  • 1 ½ tsp (7 mL) vanilla
  • 1 ½ cup (375 mL) flour
  • ½ cup (125 mL) Manitoba oats
  • 1 tsp (5 mL) baking soda
  • 1 tsp (5 mL) cinnamon
  • ½ tsp (2 mL) salt
  • 1 ½ cup (375 mL) chocolate chips

Method

  1. Preheat oven to 350oF (165oC). Prepare baking sheets by greasing them or by lining them with parchment paper.

  3. Combine flour, oats, baking soda, cinnamon and salt in medium bowl. Stir to combine.
  4. In large mixing bowl, cream butter and sugars until well combined, about 5 minutes. Add bean mixture and vanilla to butter-sugar mixture and mix thoroughly.
  5. Add flour mixture to large mixing bowl in 2-3 addition. Mix until just barely combined. Add chocolate chips and stir until blended.
  6. Drop cookie dough by rounded teaspoons onto cookie sheets.
  7. Bake in preheated oven for 10-12 minutes, until edges are golden brown.
