- 1 cup (250 mL) butter or margarine, at room temperature
- 1 cup (250 mL) brown sugar
- ½ cup (125 mL) white sugar
- 2 Countryside Farms Free Run Vita Eggs
- 1 19oz-can (560 mL) white beans
- 1 ½ tsp (7 mL) vanilla
- 1 ½ cup (375 mL) flour
- ½ cup (125 mL) Manitoba oats
- 1 tsp (5 mL) baking soda
- 1 tsp (5 mL) cinnamon
- ½ tsp (2 mL) salt
- 1 ½ cup (375 mL) chocolate chips
Method
- Preheat oven to 350oF (165oC). Prepare baking sheets by greasing them or by lining them with parchment paper.
- In blender, combine the white beans and eggs. Puree until smooth and creamy.
- Combine flour, oats, baking soda, cinnamon and salt in medium bowl. Stir to combine.
- In large mixing bowl, cream butter and sugars until well combined, about 5 minutes. Add bean mixture and vanilla to butter-sugar mixture and mix thoroughly.
- Add flour mixture to large mixing bowl in 2-3 addition. Mix until just barely combined. Add chocolate chips and stir until blended.
- Drop cookie dough by rounded teaspoons onto cookie sheets.
- Bake in preheated oven for 10-12 minutes, until edges are golden brown.
