Ingredients
- 1 Tbsp (15 mL) butter
- 2 Tbsp (30 mL) olive oil
- 1 cup (250 mL) Peak of the Market onion, diced
- 1 - 12 oz (375 g) pkg. Granny’s Mediterranean Turkey Sausage, sliced
- 3 cups (750 mL) turkey or chicken stock, homemade or low sodium
- ½ cup (125 mL) Peak of the Market roasted bell peppers, diced
- ½ tsp (2 mL) sea salt
- ¼ tsp (1 mL) freshly ground black pepper
- ¼ cup (50 mL) pine nuts, toasted
- ¼ cup (50 mL) fresh Parmesan cheese, shredded
- 2 tbsp (30 mL) Italian parsley, coarsely chopped
- 10 cups (2 ½ L) rustic Italian bread, cubed (not too fresh)
Method
- Preheat oven to 350°F (180°C).
- In medium frypan heat butter and oil. Sauté onion and sausage until lightly brown. Let cool.
- In large bowl mix remaining ingredients.
- Pour cooked sausage mixture over ingredients in bowl. Mix well.
- Place mixture into greased casserole dish. Cover.
- Bake for 1 ½- 1 ¾ hours or until heated through.
