Baked Turkey & Black Bean Burritos

Ingredients

  • 2 cups (400 g) diced Butterball Boneless Turkey Breast Roast, cooked
  • 1 bell pepper, diced
  • 3 green onions, diced
  • 1 cup (235 ml) frozen corn
  • 1 19oz (540 ml) can black beans, drained and rinsed
  • 1/2 cup (120 ml) salsa
  • 1 tbsp (15 ml) chili powder
  • 1 tsp (5 ml) cumin
  • 1/2 tsp (2.5 ml) garlic powder
  • 1/2 tsp (2.5 ml) salt
  • 3 cups (250 g) cheddar cheese, shredded
  • 8 large flour tortillas

Method

  1. Preheat oven to 375°F (190°C).
  2. In a medium size mixing bowl, combine all ingredients except cheese and tortillas.
  3. Divide filling evenly among 8 tortillas.
  4. Sprinkle cheese over filling.
  5. Roll burritos by folding the sides in then rolling the tortilla from bottom to top ensuing to tuck in the filling. Place rolled burritos onto a baking sheet.
  6. Bake for 15-20 minutes or until heated through and cheese is melted.
  7. Serve hot.
