- ½ cup (125 ml) strawberry jam
- 3 tbsp (45 ml) creamed honey
- 2 tbsp (30 ml) canola oil
- ½ tsp (2 ml) salt
- ½ tsp (2 ml) vanilla extract
- 2 cups (500 ml) oat flour
- ¼ cup (60 ml) ground flax seed
- ½ to ¾ cup (125 ml to 180 ml) unsweetened flaked coconut
Method
- In a medium-sized bowl, stir together the jam, honey, canola oil, salt, and vanilla extract.
- Add in the oat flour and ground flax seed and stir to combine.
- Place the flaked coconut in a separate bowl.
- Using a small scoop, form into balls and roll in coconut flakes to coat.
- Store in the refrigerator or freezer.
