Spiced Chickpea Frittata

Ingredients

  • 8 Large Countryside Farms Free Run Vita Eggs
  • ¼ Cup (125ml) milk
  • 1 tsp (2ml) Dijon mustard
  • 1 Tbsp canola oil
  • ½ Cup (125ml) diced red onion
  • 1 Cup (250ml) cooked chickpeas (canned can be substituted)
  • ¼ cup chopped prosciutto
  • 1 tsp (2ml) ground cumin
  • ½ tsp (1ml) smoked paprika
  • ¼ tsp (.5ml) ground cayenne
  • ½ tsp (1ml) ground coriander
  • ½ Cup (125ml) Feta cheese
  • ½ Cup chopped raw spinach
  • salt
  • pepper

Method

  1. Pre heat oven to 350-375 °F.
  2. Combine the eggs, Dijon mustard, milk and whisk until well combined. Season with salt and pepper and set aside.
  3. Place cast iron skillet or heavy bottom pan on medium heat and add the canola oil. Add the red onion and sweat for 1-2 minutes.
  4. Add chickpeas, prosciutto, spices and sauté an additional 2-3 minutes.
  5. Add the egg mixture and gently shake the pan to distribute. Sprinkle with the feta, spinach, and bake 15 to 20 minutes or until the eggs are set.
  6. Serve with salad or toast or just as is!
