Peanut Butter Honey Rice Crispy Treats – Great Tastes of Manitoba

What could be simpler than a no bake cereal bar made right in the microwave? Our Peanut Butter Honey Rice Crispy Treats are easy enough for your kids to make, but elevated enough to serve to guests.

6 cups (1.5 L) crispy rice cereal

2 cups (500 mL) peanuts, roasted and salted

1 cup (250 mL) mini marshmallows

1/3 cup (75 mL) butter, unsalted

1 cup (250 mL) peanut butter, smooth

¾ cup (175 mL) BeeMaid Honey, liquid

25 marshmallows, regular

1 ½ cups (375 mL) semisweet chocolate chips

1 Tbsp (15 mL) butter

Flaky sea salt, as desired

Lightly grease a 9 x 13 pan.
In a large mixing bowl, combine rice crisps, peanuts, and mini marshmallows. Set aside.
In a large, microwave safe container, microwave butter, peanut butter and honey for 1:00 minute, stirring halfway, until combined.
Stir in regular marshmallows. Microwave on high for 30 seconds at a time, stirring in between until all ingredients are melted.
Pour hot peanut butter mixture over top dry ingredients and mix to evenly combine.
Transfer to greased 9 x 13 dish, and pack down so it forms an evenly packed layer.
Allow to set for 1 hour.
In a microwave safe dish, add chocolate chips and butter. Microwave on high in 30 second increments, stirring in between.
Once chocolate is completely melted, spread evenly over top of the peanut butter honey square.
Lightly sprinkle flaky salt over the surface.
Cover with plastic wrap and store in the fridge until chocolate has set. Enjoy!
