Ingredients
- 2 Tbsp (30 mL) butter
- 1/2 lb (250 g) fresh mushrooms, sliced (white or crimini)
- 3/4 cup (175 mL) milk
- 2 eggs
- Salt and freshly ground pepper
- 1 tsp (5 mL) oregano
- 1/2 tsp (2 mL) garlic salt
- 4-1/2-inch thick slices French baguette bread
- 1 Tbsp (15 mL) butter
- 1 cup (250 mL) EACH grated Parmesan cheese and grated Mozzarella cheese
Method
- In frypan over medium heat melt 2 tablespoons (30 mL) butter.
- Add mushrooms. Saute until tender about 5 – 7 minutes.
- Remove from heat. Cover. Keep warm.
- In medium bowl whisk together milk and eggs.
- Add salt, pepper, oregano and garlic salt. Mix well.
- Dip bread slices in egg mixture.
- In frypan melt 1 Tbsp (15 mL) butter.
- Arrange bread slices in frypan.
- Evenly sprinkle with half the Parmesan cheese.
- Cook until golden brown. Turn over to cook other side.
- Evenly sprinkle with remaining Parmesan cheese.
- Cook until firm and egg mixture is set.
- Transfer bread slices to cookie sheet.
- Divide mushroom mixture evenly among bread slices.
- Top with Mozzarella cheese.
- Broil until cheese is melted and golden brown.
