Kale Caesar Salad

Ingredients

  • ¼ cup (60 mL) canola oil
  • 2 Tbsp (30 mL) mayo
  • 2 Tbsp (30 mL) grated Parmesan cheese
  • 2 Tbsp (30 mL) lemon juice
  • 1 Tbsp (15 mL) red wine vinegar
  • 1 tsp (5 mL) Worcestershire sauce
  • 2 tsp (10 mL) anchovy paste
  • ½ Tbsp (8 mL) dijon mustard
  • 2 cloves garlic, minced
  • ¼ tsp (1.2 mL) each salt and ground black pepper
  • ¼ cup (60 mL) red onions, sliced
  • ¼ cup (60 mL) croutons
  • 6 cups shredded kale

Method

  1. In a bowl, whisk mayo, oil, parmesan, lemon, vinegar, Dijon mustard, anchovy paste, Worcestershire sauce, garlic, salt and black pepper.
  2. In a large bowl, add kale, red onions and croutons and drizzle desired amount of dressing onto salad. Keep remaining dressing refrigerated in a mason jar.
  3. Serve with Grilled Steak & Smashed Potatoes for a restaurant quality meal!
