- 1 pkg (2 lbs) frozen hash browns, thawed
- 1 Tbsp (15 mL) canola oil
- 2 cups (500 mL) sour cream
- 2 (284 mL each) cans cream of low sodium mushroom soup
- 1/2 cup (125 mL) butter, melted
- 1/4 cup (60 mL) Peak of the Market onion, minced
- 1 tsp (5 mL) salt
- 1 tsp (5 mL) black pepper
- 2 cups (500 mL) shredded Cheddar cheese
- 1/2 cup (125 mL) shredded Parmesan cheese
- 1/4 cup (60 mL) chopped Peak of the Market green onion
Method
- Preheat oven to 350°F. Grease a 9X13-inch baking dish.
- Heat a large frying pan over medium heat. Add oil and cook thawed hash browns stirring every 2-3 minutes until golden brown, about 10 minutes.
- In a large bowl, mix hash browns and all remaining ingredients except the Parmesan cheese and green onion.
- Transfer hash brown mixture to the prepared baking dish.
- Sprinkle Parmesan cheese on top.
- Bake at 350°F (175°C) for 1 hour.
- Garnish each serving with fresh green onions.

Don’t have frozen hash browns on hand? Substitute with 2 pounds of freshly chopped, pre-cooked potatoes.
