- 1 19oz-can (560 mL) fava beans, drained and rinsed
- 1 cup (250 mL) chickpeas, drained and rinsed (about ½ can)
- 3 cloves garlic, peeled and halved
- 1 small red onion, or half a large one, chopped
- 1 Tbsp (15 mL) lemon juice
- 1 Tbsp (15 mL) canola oil
- 1 Tbsp (15 mL) chopped parsley
- ½ tsp (2 mL) salt
- ¾ tsp (3 mL) cumin
- 1-2 Tbsp (15-30 mL) water, as needed (add at the very end)
Method
- Preheat oven to 375°F (190°C). Prepare baking sheets by greasing generously with canola oil.
- Place fava beans and chickpeas in food processor and process until smooth. It is handy to have a couple extra tablespoons of water to reach desired consistency.
- Add all other ingredients and process until well blended.
- Scoop about 2 Tbsp (30 mL) of the mixture onto the prepared cookie sheets and flatten into rounds. Repeat until all mixture is used up.
- Bake for about 25-30 min, until golden brown all around. Flip patties halfway through baking.
- Serve in warm pita, with tzatziki and fresh lettuce/tomatoes/onions.
