Baked Falafel

Ingredients

  • 1 19oz-can (560 mL) fava beans, drained and rinsed
  • 1 cup (250 mL) chickpeas, drained and rinsed (about ½ can)
  • 3 cloves garlic, peeled and halved
  • 1 small red onion, or half a large one, chopped
  • 1 Tbsp (15 mL) lemon juice
  • 1 Tbsp (15 mL) canola oil
  • 1 Tbsp (15 mL) chopped parsley
  • ½ tsp (2 mL) salt
  • ¾ tsp (3 mL) cumin
  • 1-2 Tbsp (15-30 mL) water, as needed (add at the very end)

Method

  1. Preheat oven to 375°F (190°C). Prepare baking sheets by greasing generously with canola oil.
  2. Place fava beans and chickpeas in food processor and process until smooth. It is handy to have a couple extra tablespoons of water to reach desired consistency.
  3. Add all other ingredients and process until well blended.
  4. Scoop about 2 Tbsp (30 mL) of the mixture onto the prepared cookie sheets and flatten into rounds. Repeat until all mixture is used up.
  5. Bake for about 25-30 min, until golden brown all around. Flip patties halfway through baking.
  6. Serve in warm pita, with tzatziki and fresh lettuce/tomatoes/onions.
