Apricot Barley Bake

Ingredients

  • ⅔ cup (160 mL) dried apricots
  • 1 cup (250 mL) pearl barley
  • 3 cups (750 mL) Manitoba Oat milk, divided
  • ⅓ cup (80 mL) brown sugar
  • ½ tsp (2 mL) cardamom
  • ½ tsp (2 mL) salt
  • 2 Countryside Farms Vita Eggs
  • 2 Tbsp (30 ml) canola oil
  • 1 tsp (5 mL) vanilla
  • ⅓ cup (80 mL) whole wheat flour
  • 1 tsp (5 mL) baking powder

Method

  1. Preheat the oven to 350°F (180°C).
  2. Spray a 9×9 (23×23 cm) baking pan with cooking oil.
  3. Chop the dried apricots into ~8 pieces each and sprinkle in the baking pan.
  4. Pour the barley on top of the apricots.
  5. Whisk together 2 ⅔ cup (660mL) oat milk, the brown sugar, cardamom, and salt.
  6. Pour into the baking pan and cover with aluminum foil.
  7. Bake in the pre-heated oven for 30 minutes.
  8. Stir and bake for another 15 minutes.
  9. Meanwhile, whisk together the remaining ⅓ cup (80 mL) oat milk, eggs, canola oil, and vanilla together.
  10. Whisk the flour and baking powder in as well.
  11. Remove the baking pan from the oven and stir in this mixture.
  12. Re-cover the baking pan with the aluminum foil and return it to the oven to bake for another 5 minutes.
