- ⅔ cup (160 mL) dried apricots
- 1 cup (250 mL) pearl barley
- 3 cups (750 mL) Manitoba Oat milk, divided
- ⅓ cup (80 mL) brown sugar
- ½ tsp (2 mL) cardamom
- ½ tsp (2 mL) salt
- 2 Countryside Farms Vita Eggs
- 2 Tbsp (30 ml) canola oil
- 1 tsp (5 mL) vanilla
- ⅓ cup (80 mL) whole wheat flour
- 1 tsp (5 mL) baking powder
Method
- Preheat the oven to 350°F (180°C).
- Spray a 9×9 (23×23 cm) baking pan with cooking oil.
- Chop the dried apricots into ~8 pieces each and sprinkle in the baking pan.
- Pour the barley on top of the apricots.
- Whisk together 2 ⅔ cup (660mL) oat milk, the brown sugar, cardamom, and salt.
- Pour into the baking pan and cover with aluminum foil.
- Bake in the pre-heated oven for 30 minutes.
- Stir and bake for another 15 minutes.
- Meanwhile, whisk together the remaining ⅓ cup (80 mL) oat milk, eggs, canola oil, and vanilla together.
- Whisk the flour and baking powder in as well.
- Remove the baking pan from the oven and stir in this mixture.
- Re-cover the baking pan with the aluminum foil and return it to the oven to bake for another 5 minutes.
