Baked Turkey, Tomato & Boursin with Pasta

Ingredients

  • 3 cup (750 ml) Butterball Boneless Turkey Breast Roast, roasted and cubed
  • 1 red pepper, diced
  • 3 green onions, chopped
  • 1 10 oz (283 g) pkg. cherry or grape tomatoes, sliced in half
  • ¼ cup (50 ml) basil pesto
  • 2 cloves garlic, minced
  • ¼ cup (50 ml) sundried tomatoes, diced (optional)
  • Salt & freshly ground pepper to taste
  • 5 oz (150 g) pkg. soft cheese, herb & garlic flavour (ie. Boursin)
  • 16 oz (500 g) pasta (small shells or penne or rotini)
  • Freshly grated parmesan cheese (optional)
  • Fresh basil (optional)

Method

  1. Preheat oven to 375°F (190°C).
  2. In a medium size mixing bowl combine turkey, red pepper, green onion, tomatoes, basil pesto, garlic, sundried tomatoes, salt and pepper.
  3. In a 13″ x 9″ (33 cm x 23 cm) glass baking dish, place cheese in the centre. Surround cheese with turkey-vegetable mixture.
  4. Cover. Bake in oven for 30-40 minutes or until the vegetables are soft.
  5. Meanwhile, cook pasta according to package directions. Before draining, reserve ½ cup (125 ml) of the pasta water.
  6. Once the turkey mixture is done, add pasta water and pasta. Stir well to combine.
  7. Top with freshly grated parmesan cheese and fresh basil.
  8. Serve immediately.
