1 tsp (5 mL) EACH salt, ground black pepper, dried thyme, garlic powder and onion powder
½ tsp (2 mL) EACH brown sugar and cayenne pepper
⅓ cup (75 mL) paprika
Drumsticks
2 lbs. (1 kg) or about 12 drumsticks
1 Tbsp (15 mL) butter, melted
Method
Preheat oven to 375°F (190°C).
In small bowl combine Cajun spice mix ingredients and mix well.
Place drumsticks in a single layer in a pan.
Melt butter and brush evenly on drumsticks.
Season drumsticks generously with Cajun spice mixture by rolling drumsticks in spice blend to ensure all sides are evenly coated.
Transfer drumsticks to a baking pan.
Bake for 30 minutes, remove from oven turn and bake for an additional 15 minutes or until internal temperature of thickest part of drumstick reads 165°F (74°) on a meat thermometer.
Remove from oven and let rest for 5-10 minutes before serving.
