Ingredients
- 8 large Countryside Farms Free Run Vita Eggs
- ¼ cup (50 mL) milk
- 1 tsp (5 mL) Dijon mustard
- Salt and freshly ground pepper to taste
- 1 Tbsp (15 mL) canola oil
- ½ cup (125 mL) diced red onion
- 1 cup (250 mL) cooked chickpeas (canned can be substituted)
- ¼ cup (50 mL) chopped prosciutto
- 1 tsp (5 mL) ground cumin
- ½ tsp (2 mL) smoked paprika
- ¼ tsp (1 mL) ground cayenne
- ½ tsp (2 mL) ground coriander
- ½ cup (125 mL) crumbled Feta cheese
- ½ cup (125 mL) chopped fresh spinach
Method
- Preheat oven to 375 °F (190°C).
- In medium bowl combine eggs, milk and Dijon mustard. Whisk well. Season with salt and pepper. Set aside.
- In cast iron skillet or heavy bottom pan on medium heat add canola oil. Sauté red onion for 1 – 2 minutes.
- Add chickpeas, prosciutto, spices and sauté an additional 2 – 3 minutes.
- Add egg mixture to skillet and gently shake the pan to distribute. Sprinkle with feta cheese and spinach.
- Bake 15 to 20 minutes or until the eggs are set.
- Serve with salad or toast or just as is!
