- 1 Tbsp (15 mL) butter
- 1/2 lb (250 g) fresh mushrooms, sliced (white and crimini)
- 1 clove garlic, minced
- 1/2 tsp (2 mL) oregano
- Freshly ground pepper to taste
- Butter for spreading on bread
- 4 slices rye bread
- 1/4 cup (50 mL) Thousand Island dressing, divided
- 1 cup (250 mL) sauerkraut, drained
- 4 slices Swiss cheese
Method
- In non-stick skillet melt butter over medium-high heat.
- Add mushrooms, garlic, oregano and pepper. Saute mushrooms for 5 – 7 minutes.
- Remove mushrooms to a bowl. Cover. Set aside. Wipe out pan. Set aside.
- To assemble sandwich: One slice Rye bread, 2 tablespoons (30 mL) salad dressing, 1 slice of cheese, 1/2 mushroom mixture, 1/2 cup sauerkraut, slice of cheese and Rye bread.
- Repeat with other sandwich.
- Spread butter on outside edges of sandwich.
- Grill on pre-heated pan.
- Turn over when toasted and browned and cheese is melting.
- Repeat on other side.
- Serve with additional dressing, if desired.
