Mushroom Reuben

Ingredients

  • 1 Tbsp (15 mL) butter
  • 1/2 lb (250 g) fresh mushrooms, sliced (white and crimini)
  • 1 clove garlic, minced
  • 1/2 tsp (2 mL) oregano
  • Freshly ground pepper to taste
  • Butter for spreading on bread
  • 4 slices rye bread
  • 1/4 cup (50 mL) Thousand Island dressing, divided
  • 1 cup (250 mL) sauerkraut, drained
  • 4 slices Swiss cheese

Method

  1. In non-stick skillet melt butter over medium-high heat.
  2. Add mushrooms, garlic, oregano and pepper. Saute mushrooms for 5 – 7 minutes.
  3. Remove mushrooms to a bowl. Cover. Set aside. Wipe out pan. Set aside.
  4. To assemble sandwich:  One slice Rye bread, 2 tablespoons (30 mL) salad dressing, 1 slice of cheese,  1/2 mushroom mixture, 1/2 cup sauerkraut, slice of cheese and Rye bread.
  5. Repeat with other sandwich.
  6. Spread butter on outside edges of sandwich.
  7. Grill on pre-heated pan.
  8. Turn over when toasted and browned and cheese is melting.
  9. Repeat on other side.
  10. Serve with additional dressing, if desired.
