- Canola baking spray
- 2 Tbsp (30 mL) sugar
- 1 ¼ cups (300 mL) all-purpose flour
- 1 tsp (5 mL) cinnamon
- ½ tsp (2 mL) baking powder
- ¼ tsp (1 mL) EACH baking soda and salt
- 1 egg
- 1/3 cup (75 mL) brown sugar, firmly packed
- ¼ cup (60 mL) EACH applesauce, plain yogurt and maple syrup
- 2 Tbsp (30 mL) canola oil
Glaze
- ½ cup (125 mL) icing sugar
- 3 Tbsp (45 mL) maple syrup
- ½ tsp (2 mL) vanilla
Method
- Preheat oven to 375°F (190°C).
- Spray doughnut pan with canola cooking spray and sprinkle with sugar. Tap pan to remove excess sugar.
- In small bowl, whisk together flour, cinnamon, baking powder, baking soda and salt. Set aside.
- In large bowl, whisk together egg, brown sugar, applesauce, yogurt, maple syrup and canola oil. Mix well.
- Add dry ingredients and mix just to combine ingredients.
- Transfer mixture to zip lock bag. Cut off one corner of the bag.
- Squeeze batter from the bag and fill doughnut ‘rings’ in doughnut baking pan. Fill each one approximately half full.
- Bake for approximately 8-10 minutes or until toothpick inserted into a doughnut comes out clean.
- Tip pan over to release doughnuts and set doughnuts on a wire rack to cool.
- Combine glaze ingredients in a small bowl.
- Adjust amount of maple syrup to get right consistency.
- Drizzle glaze over doughnuts.
