Breakfast Skillet with Turkey Sausage

Ingredients

Method

  1. Make a batch of Homemade Turkey Breakfast Sausage. Cook and cut patties into quarters.
  2. In a large skillet, sauté red onion and baby potatoes over medium heat in olive oil until lightly browned.
  3. Reduce heat to low and add spinach. Continue stirring until spinach is wilted.
  4. Add sausage.
  5. Crack eggs on top being careful not to break the yolks.
  6. Season with salt and pepper. Top with cheese.
  7. Cover and simmer until eggs reach the desired doneness.
  8. Serve warm.
