Ingredients
- 2 poached boneless skinless chicken breasts, filet removed
- 1/4 cup (50 mL) sliced celery
- 1/2 cup (125 mL) seedless grapes, halved
- 1/2 cup (125 mL) pineapple chunks, well drained
- 1 1/2 Tbsp (22 mL) low fat mayonnaise
- 3/4 cup (175 mL) unsweetened low fat yogurt
- 2 tsp (10 mL) lemon juice
- 1/2 tsp (2 mL) liquid honey
- 1 1/2 tsp (7 mL) finely chopped fresh mint pepper to taste
Method
- Cut chicken into bite size pieces and put in a bowl. Add celery, grapes and pineapple.
- Whisk together dressing ingredients and pour over chicken and fruit.
- Gently toss to mix then refrigerate until needed.
- Mound salad on lettuce leaves to serve.
To poach chicken
- In a saucepan, combine chicken breasts with a quartered onion, 3 baby carrots, a sliced celery stalk and 3 sprigs of parsley.
- Add just enough water to barely cover the chicken.
- Bring to a boil then reduce heat and simmer 30 minutes.
