- 2 cup (500 mL) turkey breast, cubed
- 2 tbsp (30 mL) vegetable oil
- 1/4 cup (60 mL) bacon, diced
- 1/2 cup (125 mL) yellow onion, diced
- 1 tbsp (15 mL) olive oil
- 2 tbsp (30 mL) jalapeno or red chili peppers, seeded and chopped
- 1 tbsp (15 mL) garlic
- 3 cup (750 mL) low sodium turkey or chicken stock
- 2 cup (500 mL) potato, peeled and diced
- 1 tsp (5 mL) mild paprika
- 1 tsp (5 mL) ground cumin
- 1/2 tsp (2.5 mL) ground coriander
- 3 cup (750 mL) frozen corn
- 2 cup (500 mL) 3% milk
- 1 tsp (5 mL) sea salt
- to taste fresh black pepper
- 2 tbsp (30 mL) cilantro, coarsely chopped
- 1/2 cup (125 mL) sour cream
Method
- Sauté turkey pieces in oil until brown. Set browned turkey aside.
- In a soup pot over medium heat sauté bacon and onion until golden brown.
- Add jalapeno and garlic and sauté until soft.
- Add chicken stock, potatoes and spices. Cook until potatoes are soft.
- Add corn and milk and bring to a gentle boil.
- Blend with a hand blender or table top blender until partly blended but still chunky.
- Add turkey and bring soup back to a gentle boil.
- Season to taste with salt and pepper.
- Garnish each bowl with fresh cilantro and a spoonful of sour cream.
