One Pan Chicken Souvlaki

Ingredients

  • 2 lbs (1000 g) boneless, skinless chicken breasts or thighs, cut into ½ inch strips
  • 1 Peak of the Market red onion, sliced into ½ inch wedges
  • 1 Peak of the Market large yellow pepper, seeded, cut into ½ inch strips
  • Zest of 1 lemon
  • 1/3 cup (80 ml) fresh lemon juice (about 2 lemons)
  • 1/3 cup (80 ml) olive oil
  • 3 garlic cloves, minced
  • 2 Tbsp (30 ml) fresh oregano, chopped (or 1 Tbsp dried)
  • 2 tsp (10 ml) fresh rosemary, chopped (or 1 tsp dried)
  • 1 tsp (5 ml) salt
  • 1 tsp (5 ml) black pepper

Method

  1. Combine chicken, red onion, yellow pepper, lemon zest, lemon juice, olive oil, garlic, oregano, rosemary, salt, and pepper in a large bowl. Mix well to combine and pour marinade over chicken and vegetables, mix well. Marinate in the fridge for a minimum of 30 minutes or overnight.
  2. Preheat large (12 inch) heavy skillet (cast iron) over high heat. Add the chicken and vegetables including the marinade, spread out and allow to cook for 5 minutes without stirring, until browned on bottom.
  3. Stir chicken and continue to stir-fry over high heat for about 5 minutes or until chicken is cooked through with no pink remaining. Do not overcook or chicken will be dry. Remove chicken from heat.
  4. Serve chicken souvlaki with warm pita and raw vegetables of your choice. Place warm pita bread on serving plate, top with generous spoonful of souvlaki mixture. Top with tzatziki and fresh mint, squeeze of lemon, if desired.
