Ingredients
- 2 Countryside Farms Free Run Vita Eggs
- ½ cup (125 mL) salted butter, melted
- 1 cup (250 mL) plain Greek yogurt
- 2 ½ cups (625 mL) milk
- 3 tbsp (45 mL) brown sugar
- 1 tsp (5 mL) vanilla extract
- 3 cups (750 mL) all-purpose flour
- ½ cup (125 mL) ground flax seed
- 4 tsp (20 mL) baking powder
- ½ tsp (2 mL) salt
Method
- Preheat waffle iron.
- In a large bowl, whisk together egg and melted butter.
- Whisk in yogurt, milk, brown sugar and vanilla extract.
- Whisk in flour, ground flax seed, baking powder, and salt JUST until combined. Do not overmix. A few lumps are okay.
- Allow the batter to sit for five minutes.
- Spoon batter into preheated waffle iron.
- Cook until golden brown.
- To freeze, place the waffles on a parchment lined baking sheet. Freeze until solid and then place in a plastic zip bag.
- To enjoy from frozen, place frozen waffle in toaster until warmed through and toasted.
