- 2 Countryside Farms Free Run Vita Eggs
- ½ cup (125 ml) salted butter, melted
- 1 cup (250 ml) plain Greek yogurt
- 2 ½ (625 ml) cups milk
- 3 tbsp (45 ml) brown sugar
- 1 tsp (5 ml) vanilla extract
- 3 cups (750 ml) all-purpose flour
- ½ cup (125 ml) ground flax seed
- 4 tsp (20 ml) baking powder
- ½ tsp (2 ml) salt
Method
- Preheat the waffle iron.
- In a large bowl, whisk together the egg and melted butter.
- Whisk in the yogurt, milk, brown sugar, and vanilla extract.
- Whisk in the all-purpose flour, ground flax seed, baking powder, and salt JUST until combined. A few lumps are okay.
- Allow the batter to sit for five minutes.
- Spoon batter into preheated waffle iron.
- Cook until golden brown.
- To freeze, place the waffles on a parchment lined baking sheet. Freeze until solid and then place in a plastic zip bag.
- To enjoy from frozen, place a frozen waffle in a toaster until warmed through and toasted on the outside.
