These chewy sweet-and-salty bites are high in fibre and protein. Ready in just 15 minutes with no cooking required, they make a perfect lunchbox treat or grab and go snack.
Ingredients
- ¾ cup (175 mL) quick oats
- 1 19oz (540mL) can black beans, drained and rinsed
- 1 cup (250 mL) smooth natural peanut butter
- ⅓ cup (75 mL) honey
- ¼ cup (60 mL) unsweetened cocoa powder
- Pinch of salt
- ½ cup (125 ml) peanuts, crushed
Method
- Add oats, black beans, peanut butter, honey, cocoa powder, and salt to a food processor. Pulse until well combined.
- Roll the mixture into 1-inch balls, and then roll in crushed peanuts. Enjoy immediately or store in an airtight container in the fridge for 5-7 days.
Tips
Don’t have quick oats? Blitz some rolled oats or large flake oats in the food processor a few times before adding in the rest of the ingredients for the same chewy texture as quick oats.
