Cajun Chicken Drumsticks

Ingredients

  • 2 lb (1000 g) or about 12 drumsticks
  • 2 Tbsp (30 ml) oregano
  • 1 tsp (5 ml) ground black pepper
  • 1 tsp (5 ml) thyme
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) onion powder
  • ½ tsp (2.5 ml) brown sugar
  • 1/3 cup (80 ml) paprika
  • 1 tsp (5 ml) salt
  • 1/2 tsp (2.5 ml) cayenne
  • 1 Tbsp (15 ml) butter, melted

Method

  1. Preheat oven to 375°F.
  2. Add dry Cajun spice ingredients to a small bowl and mix well.
  3. Place drumsticks in a single layer in a pan.
  4. Melt butter and brush evenly on drumsticks.
  5. Season drumsticks generously with Cajun spice mixture by rolling drumsticks in spice blend to ensure all sides are evenly coated.
  6. Transfer drumsticks to a baking pan.
  7. Bake for 30 minutes, remove from oven turn and bake for an additional 15 minutes or until internal temperature of thickest part of drumstick reads 165°F on a meat thermometer.
  8. Remove from oven and let rest for 5-10 minutes before serving.
