Turkey Parmesan Sandwich

Ingredients

  • 1 Granny’s Seasoned Boneless Turkey Breast, thawed
  • 1/2 cup (125 mL) flour
  • 1/2 tsp (2.5 mL) sea salt
  • 2 cup (500 mL) Panko crumbs
  • 2 tbsp (30 mL) olive oil
  • 3 tbsp (45 mL) Parmesan cheese, grated
  • 1/2 tsp (2.5 mL) paprika
  • 3 eggs, beaten
  • 5 slices mozzarella chesse

Method

  1. Preheat oven to 375°F (190°C).
  2. Cut turkey breast into fillets.
  3. In a bowl, mix flour and salt.
  4. Mix panko crumbs with olive oil, parmesan and paprika in a separate bowl.
  5. Place eggs in a third bowl.
  6. Dredge one turkey fillet at a time in flour mixture, then dip in egg, and roll them in the panko mixture until they are well coated.
  7. Place breaded turkey fillets flat on a baking sheet and bake for 10 minutes.
  8. Flip each fillet and continue to cook for 10 minutes.
  9. Generously cover each fillet in marinara sauce and place a slice of mozzarella cheese on top.
  10. Serve fillets on toasted garlic buns and cover with extra marinara sauce, if desired.
