Slow Cooker Turkey Chili with Apples

Ingredients

  • 1 lb (454 g) ground turkey
  • 3 tbsp (45 mL) olive oil
  • 1 cup (250 mL) onion, diced
  • 1/2 cup (125 mL) carrots, diced
  • 1/4 cup (60 mL) celery, diced
  • 2 cup (500 mL) apples, peeled, cored and chopped
  • 2 cup (500 mL) your favourite winter squash, peeled & chopped
  • 2 tbsp (25 mL) garlic, diced
  • 2 tbsp (25 mL) mild paprika
  • 4 tsp (20 mL) ground cumin
  • 1 tsp (5 mL) dried oregano
  • 1/4 tsp (1 mL) sea salt
  • 1/4 tsp (1 mL) freshly ground black pepper
  • 1 can (10 fl oz / 284 mL) chicken broth (undiluted)
  • 1 can (14 oz / 400 mL) light coconut milk
  • 2 tbsp (25 mL) tomato paste
  • 1 cup (250 mL) canned red kidney beans, drained and rinsed

Directions

  1. Saute ground turkey in half the olive oil.
  2. Transfer turkey to slow cooker and saute onions, carrots and celery in remaining oil.
  3. Add sauteed vegetables, apples and all remaining ingredients to slow cooker and cook on low heat for 6-8 hours.
  4. Stir well, garnish with fresh cilantro to serve.
