Ingredients
Ingredients
- 1 lb (454 g) ground turkey
- 3 tbsp (45 mL) olive oil
- 1 cup (250 mL) onion, diced
- 1/2 cup (125 mL) carrots, diced
- 1/4 cup (60 mL) celery, diced
- 2 cup (500 mL) apples, peeled, cored and chopped
- 2 cup (500 mL) your favourite winter squash, peeled & chopped
- 2 tbsp (25 mL) garlic, diced
- 2 tbsp (25 mL) mild paprika
- 4 tsp (20 mL) ground cumin
- 1 tsp (5 mL) dried oregano
- 1/4 tsp (1 mL) sea salt
- 1/4 tsp (1 mL) freshly ground black pepper
- 1 can (10 fl oz / 284 mL) chicken broth (undiluted)
- 1 can (14 oz / 400 mL) light coconut milk
- 2 tbsp (25 mL) tomato paste
- 1 cup (250 mL) canned red kidney beans, drained and rinsed
Method
- Saute ground turkey in half the olive oil.
- Transfer turkey to slow cooker and saute onions, carrots and celery in remaining oil.
- Add sauteed vegetables, apples and all remaining ingredients to slow cooker and cook on low heat for 6-8 hours.
- Stir well, garnish with fresh cilantro to serve.
