Pizza Monkey Bread

Ingredients

Dough

  • 1 cup (250 mL) milk
  • 4 cup (1 L) flour, divided
  • 2 1/4 tsp (1 pkg) instant quick rise yeast
  • 1/3 cup (75 mL) butter, at room temperature
  • 2 tsp (10 mL) sugar
  • 2 eggs
  • 1/2 tsp (3 mL) salt

Filling

  • 2 cup (500 mL) Cheese Curds (white or orange cheddar) or Mozzarella cheese, cubed
  • ~30 slice (100-200 g) sliced pepperoni

Topping

  • 1/3 cup (75 mL) butter
  • 1 tsp (5 mL) garlic powder

Serving Sauce

  • Marinara sauce

Method

  1. In a small pot, heat milk over medium low heat until it is warm (not hot) to the touch.
  2. In the bowl of a stand mixer fitted with the dough hook, combine 1 cup of flour and yeast. Add the warm milk, butter, sugar, eggs, and salt and mix on low speed. Gradually add remaining 3 cups of flour.
  3. Continue mixing approximately 5 minutes or until dough pulls away from the sides of the bowl. Dough should feel soft and moist, not sticky.
  4. Transfer dough to a lightly oiled bowl and turn to coat. Cover with plastic wrap or a damp towel and allow dough to rise in a warm place until approximately doubled in size, about 2 hours.*
  5. Preheat oven to 350˚F.
  6. Grease the inside of a 10″ bundt pan.
  7. If not using cheese curds, cut cheese into 0.5″ cubes. Prepare cheese and pepperoni in seperate medium bowls.
  8. Melt 1/3 cup butter in a small shallow bowl and mix in garlic powder.
  9. Tear small pieces of dough and shape into 1″ round discs. Place a slice of pepperoni and a piece of cheese in the centre and fold dough over both to completely cover filling and make a dough ball. Place dough balls aside until all of the dough is used.
  10. Roll each dough ball in butter and immediately stack in bundt pan, staggering each layer like bricks.
  11. Drizzle any remaining butter over dough and pat down. Bake for 30 minutes.
  12. When done, remove from oven and let stand 5 minutes.
  13. Flip monkey bread upside down onto a plate. Serve immediately with marinara sauce.

Tips

The dough can be prepared a day ahead.  Mix dough ingredients, cover with plastic wrap and all to rise in the fridge overnight (8 hours).  The next day allow dough to come to room temperature before shaping filling and shaping into balls.  The monkey bread can also be assembled a day ahead.  Bake immediately before serving.
