- 1 Tbsp (15 mL) butter
- 1/2 lb (250 g) mixed fresh mushrooms (cremini, shiitake and oyster), sliced
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup (250 mL) chicken broth
- 1 Tbsp (15 mL) fresh chopped basil or 1 tsp (5 mL) dried)
- Freshly ground pepper
- Few dashes Tabasco sauce
- 4 oz (125 g) light cream cheese, cubed
- 1/2 lb (250 g) Rede-Made Noodles, cooked, drained
- Parmesan cheese
- Chopped fresh parsley
Method
- In frypan melt butter over medium heat.
- Saute mushrooms and onions until soft about 5-7 minutes.
- Add garlic. Cook 2 minutes.
- Add chicken broth, basil, pepper and Tabasco sauce.
- Bring to boil. Reduce heat. Cover. Simmer 20 minutes.
- Add cream cheese. Simmer until cheese is melted. Stir occasionally. Add more water or chicken broth to thin mixture, if necessary.
- Toss with linguine or wide noodles. Sprinkle with Parmesan cheese and parsley.
- Serve immediately.
