Mushroom Mozzarella Melt

Ingredients

  • 2 Tbsp (30 mL) butter
  • 1/2 lb (250 g) fresh mushrooms, sliced (white or crimini)
  • 3/4 cup (175 mL) milk
  • 2 eggs
  • Salt and freshly ground pepper
  • 1 tsp (5 mL) oregano
  • 1/2 tsp (2 mL) garlic salt
  • 4-1/2-inch thick slices French baguette bread
  • 1 Tbsp (15 mL) butter
  • 1 cup (250 mL) EACH grated Parmesan cheese and grated Mozzarella cheese

Method

  1. In frypan over medium heat melt 2 tablespoons (30 mL) butter.
  2. Add mushrooms. Saute until tender about 5 – 7 minutes.
  3. Remove from heat. Cover. Keep warm.
  4. In medium bowl whisk together milk and eggs.
  5. Add salt, pepper, oregano and garlic salt. Mix well.
  6. Dip bread slices in egg mixture.
  7. In frypan melt 1 Tbsp (15 mL) butter.
  8. Arrange bread slices in frypan.
  9. Evenly sprinkle with half the Parmesan cheese.
  10. Cook until golden brown. Turn over to cook other side.
  11. Evenly sprinkle with remaining Parmesan cheese.
  12. Cook until firm and egg mixture is set.
  13. Transfer bread slices to cookie sheet.
  14. Divide mushroom mixture evenly among bread slices.
  15. Top with Mozzarella cheese.
  16. Broil until cheese is melted and golden brown.
