Grilled Chicken Caesar

Ingredients

  • 2 whole romaine lettuce hearts, washed & cut lengthwise in 1/2
  • 1 Tbsp (15 mL) canola oil
  • 1/4 cup (50 mL) shaved parmesan cheese
  • 1 cup (250 mL) croutons (store bought or homemade)
  • freshly cracked black pepper
  • 4 thin slices prosciutto
  • 2 cups (500 mL) cooked chicken cut into bite size pieces
  • 1 cup (250 mL) store bought Caesar Salad dressing

Method

  1. Brush romaine hearts with olive oil.
  2. Using a hot grill, grill hearts, turning once, just until grill marks appear (approx. 1 minute each side). Take care not to overcook – lettuce should still maintain a crisp texture.
  3. Remove from heat to 4 plates.
  4. Arrange prosciutto, chicken, parmesan, and croutons on top of lettuce.
  5. Drizzle with Caesar dressing.
