Crust
- 2/3 cup chickpea flour
- 1/3 teaspoon salt
- 1 cup (250ml) water
Toppings
- 1 roasted Peak of the Market beet – sliced
- 1 Peak of the Market onion caramelized
- ½ cup (125g) Feta cheese
- 1 spring picked fresh thyme
Method
- Sift the flour with the salt into a medium bowl and slowly add ¼ cup of the water and mix until smooth.
- Add the remaining water, mix and let the batter stand at room temperature for 30 minutes.
- Heat 1 Tablespoon of canola oil in a non-stick, ovenproof skillet. Pour batter into skillet and cook the batter over moderately high heat until the bottom is golden brown and the top is almost set (approximately 3 minutes).
- Place toppings on the chickpea crust and place under broiler for 4-5 minutes.
